Simply Sunday~Low Carb Quiche

Good morning and Happy Mother's Day!

This morning I made up my lunches for the week. I love this recipe that I found here but I revise it every time. I bring one piece along with two pieces of sausage for my school lunches. 

This is how I made mine today!

Ingredients:
15 oz Cottage Cheese
6 oz Feta Cheese
2 oz Mozzarella Cheese
Fresh Spinach
Yellow and Green Onion
Mushrooms 
5 Pieces of cooked Bacon ( I use no nitrate bacon) 
Salt, Pepper and Garlic to taste

Directions:

Saute' veggies in butter or olive oil. Season with above ingredients.
Mix 3 eggs, cottage cheese, cooked bacon, salt and pepper to taste and Feta Cheese. Place in a greased Pie Dish. Add a small amount of Mozzarella Cheese and bake at 375 for 40 minutes.

Cool and slice into 8 pieces. Enjoy!

Simply Sunday- Low Carb Pizza


Yum, Yum, Yum!! 


Oh my! I am not a big Pizza eater but since I have not really had any bread in the last 6 months and pizza maybe once, I decided to give these a try.  I made this on Joseph's Flax Oat Bran and Whole Wheat Lavash bread.  I have only found this at Walmart in the Deli dept on a low shelf 

Here is the scoop: 
Ingredients: 
Crust ingredients:
1 rectangular shaped lavash bread
Olive Oil

Pizza Ingredients:
We used Kirkland's Marinara Sauce, Oregano,
Mushrooms, Onions, Green Pepper, Cooked Ground Beef, Pepperoni and Mozzarella Cheese.

Directions:
Preheat oven to 450
Heat either a pizza stone or a cookie sheet
Be sure to heat your pan first to insure a crispy crust- that was my hubby's idea!
Place the lavash on the heated sheet. Add olive oil. Bake for about 3-4 minutes.

Add Marina Sauce and then decorate with ingredients of your choice. Bake for about 6 minutes or until bubbly. Add Parmesan Cheese and bake for another minute. 

Enjoy! edit- try cutting up some fresh garlic and putting it on- soooo good!
