Christmas Day Dinner
Hi everyone. Hope you are having a great day. We are having a very quiet and peaceful day. I woke up sick, my husband is napping, my dd is at a friends and my son is quiet. I have not even made our dinner yet!! Just felt too sick to do much of anything today.
As I mentioned in an earlier post, we just started a tradition a few years ago because we did not have any. That tradition all stemmed around a little Tamale shack we found one Christmas Day. Now on Christmas Eve we all cook together. We pick up the tamales, I make Chicken Enchilada soup in the morning and let it simmer all day and the kids make their Peanut Butter Blossom cookies. We decided to do that today, on Christmas Day since we were invited to some dear friends for last night for Christmas Eve.
Well here it is almost 6 pm, I am still in my pjs, still feel so sick and no soup has been made to be put on and simmered all day!! It is very peaceful though and I am very relaxed. Everyone is content and quiet. Oh well, we did get the cookies made so we can always have those for our Christmas dinner!! That and the left over tamales!
Edit- it is now 8 pm. Hubby whipped up a Pork Roast after his nap and I got the soup made!! He is so great! Soups on! If anyone wants any recipes, just email me!

Hi Barb! Sorry you were sick today, but hope you managed to have a Merry Christmas anyway. Ours was quiet, then chaotic because the kids and grandkids came over later this afternoon. The cookies look yummy; I make them every year too.
Merry Christmas! Maria
Barb, your kiddos are so cute. Roast and cookies look so good. Thanks for sending me the soup recipe. Might make it this week. I hope you feel better.
Our house was very quiet today. Didn't seem like Christmas.
Hi Barb.
Roast looks yummy.
We now have a new tradition--no presents. We chose to provide gifts to needy kids this year. However, it was slightly amended on the morning of 12/24, when we agreed to spend only $20 and no gift cards. Amazing how far you can stretch it. Lots of fun and some little things to open.
Then we had our traditional holiday Christmas Eve meal--shrinp cocktail, chopped salad, baby lamb chops, little red potatoes, green beans, crusty rolls. For dessert---too many cookies. I made peanut butter blossoms too. Also used a sugar cookie dough, rolled 3/4 inch balls, rolled them in sugar, made a small well in the middle and filled them with peach preserves. Yum.
Diet starts this week!
Pictures look so cute, and I'm excited you had snow.
Love,
Sue
Oh how sad that you were sick. Hope you are feeling better. I hope I am popping up on your side bar now.
Looks like you had a great time even though you were sick. Love the roast hubby made for the family, the cookies can be sent to my home and your children are beautiful! See even a quiet Christmas is a beautiful Christmas! Have a great new year everyone!
