Simply Sunday~ Time to Decorate!
Happy Sunday! Welcome to my
Simply Sunday Post!
This is my post from LAST December but I pulled up the photos since I was decorating today and needed to see what I did in the past. These photos are from last year, but I changed things up a bit this year. My style is

Simply Sunday~ Maggiano's Salad
I just love this restaurant, Maggianos. I especially love to go around Christmas time each year. I found this recipe on Pinterest and made it and it is a great Copy Cat Recipe. This is the site I got it from: http://www.ourbestbites.com/2012/03/maggianos-house-salad/
Here is her recipe which she adapted from food.com:

Ingredients:
1/3 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon white sugar
1/2 cup water
2 teaspoons minced garlic
2 1/2 teaspoons kosher or coarse-grained salt
freshly ground pepper to taste
1 cup olive or vegetable oil (depending on your preference)
1 generous pinch dried oregano

Salad
5 cups chopped Romaine lettuce
5 cups chopped iceberg lettuce
3 ounces Gorgonzola cheese
4 ounces thinly sliced prosciutto
1 small red onion, thinly sliced
about 1/2 cup vegetable oil (for cooking the prosciutto)

Instructions:
To prepare the dressing, combine all the ingredients except for the oil and oregano in the jar of a blender. Blend until smooth, then, with the blender running, add the oil in a steady stream. Turn off the blender, add the oregano, and pulse 2-3 times or until combined. Set aside.
Heat the vegetable oil in a large skillet over medium-high heat. When hot, add the prosciutto and cook until brown and crispy. Remove with a slotted spoon and drain on a paper towel. Set aside.
In a large bowl, toss the lettuce, cheese, onions, and crispy prosciutto. Lightly drizzle some of the dressing on the salad and toss until combined. Serve immediately with additional dressing on the side, refrigerating any dressing leftovers. Serves 10-12.
Here is her photo of the salad. I have never cooked with Prosciutto but it was fun and easy. Please make this salad- you will love it!!

Stampin' Up! Christmas Workshop
HI friends, back again. Today was my Specialty Christmas Card Workshop. Usually we make 3 cards but today we made 5 cards. These were designed by my upline, Mary Polcin and use our new Snow Festival Designer Printed Tags. They are item #128152 and are only $3.95. This is a great way to get a start on your Christmas Cards!

Everyone brought yummy food and we had a good time even though it was in the 80's! Next Christmas Card workshop is in December and I hope it will be chilly by then!

Simply Sunday~ Southwest Soup!
Brrr, it is cold here in Texas and I had to spend all day and night outside at a stadium watching my daughter's Colorguard Competition, so I thought I would whip up a pot of this easy Southwest Soup. I got the recipe from a school cafeteria about 17 years ago!
Southwest Soup
1 lb hamburger
1 medium onion chopped
1 package Taco Seasoning
1 package dry Buttermilk Ranch Dressing
1 can Pinto Beans
1 can Corn with juice
1 can Black Beans
1 can Rotel Tomatoes
1 can Diced Tomatoes
Brown beef and onion. Add seasoning. Put other ingredients in a pot and add beef mixture. Bring to a boil then simmer on low as long as you want. The longer, the tastier. Enjoy and stay warm! Hugs! Barb

Simply Sunday~ Eggplant Parmesan
Good day! Today I am sharing my Eggplant Parmesan Recipe with you even though it is Tuesday!
First you make the Meat Sauce:
Saute' 1 medium onion and 6 cloves of garlic in Olive Oil.
Add 1 lb of hamburger and 1 lb of sweet or spicy Italian Sausage, Brown and pour off grease.
Add 3 15 oz cans of Tomato Sauce, 1 can of 6 oz Tomato Paste and 1 can of Diced Tomatoes.
Add pinch of sugar to the sauce
Boil and bring to a simmer on low all day
Eggplant: Peel and slice eggplants. Place eggplant on baking sheet and add salt. Sit for 30 minutes, drain excess water with paper towels.
Place eggplants slices on sprayed baking sheet and bake for 20 minutes at 350.
Scramble 4 eggs
Pour Italian Bread Crumbs and Parmesan Cheese in a bowl. Dip eggplant in eggs, then crumbs. Place on greased baking sheet and bake 15 minutes on each side.
Now to put it together
Use a 9x12 pan. Spray bottom of pan. Add meat sauce, battered eggplant and shredded mozzarella cheese. Layer again. Sprinkle with Parmesean Cheese.
Bake at 350 for 30 minutes, until cheese is melted.
Enjoy with a crisp salad and loaf of Italian bread!!

HELP PLEASE- too much SPAM!
HI, does anyone know how to help me? I am now getting tons of spam, EVERY time I post. Blogger keeps it from going into my comments but I get anonymous emails from spammers several times on every post ! I did put the comment moderator on here where you have to fill out a code but it is not helping it, I am still getting the comments by email. If you have any suggestions, I would love to have them.
