Simply Sunday~ Eggplant Parmesan

Good day! Today I am sharing my Eggplant Parmesan Recipe with you even though it is Tuesday!




First you make the Meat Sauce:
Saute' 1 medium onion and 6 cloves of garlic in Olive Oil.
Add 1 lb of hamburger and 1 lb of sweet or spicy Italian Sausage, Brown and pour off grease.

Add Oregano, Garlic Powder and Fennel to the meat- I don't measure, just toss it in!


Add 3 15 oz cans of Tomato Sauce, 1 can of 6 oz Tomato Paste and 1 can of  Diced Tomatoes.
Add pinch of sugar to the sauce
Boil and bring to a simmer on low all day 




Eggplant: Peel and slice eggplants. Place eggplant on baking sheet and add salt. Sit for 30 minutes, drain excess water with paper towels.
Place eggplants slices on sprayed baking sheet and bake for 20 minutes at 350.

Scramble 4 eggs
Pour Italian Bread Crumbs and Parmesan Cheese in a bowl. Dip eggplant in eggs, then crumbs. Place on greased baking sheet and bake 15 minutes on each side.




Now to put it together
Use a 9x12 pan. Spray bottom of pan. Add meat sauce, battered eggplant and shredded mozzarella cheese. Layer again. Sprinkle with Parmesean Cheese.



Bake at 350 for 30 minutes, until cheese is melted. 
Enjoy with a crisp salad and loaf of Italian bread!!
