Simply Sunday~ More new flooring!

Hi friends and welcome to my Simply Sunday post where I share recipes and home decor and a bit of miscellaneous on Sundays!!

We put in new gorgeous hardwoods downstairs after the flood last winter and I am slowly creeping them upstairs. We redid the hallway this spring and the other day got our bedroom done. I love hardwoods so much, gives such a warm and old fashioned feel.

Before- with nasty and old carpet

After with the new hardwood floors

Thanks for stopping by! Have a great Sunday!

HI friends,
Well this old lady came back from Convention exhausted but exhilarated! I had so much fun!
First let me tell you, if you are a demonstrator and have never been, you really ought to try to go next year for the 25th Stampin' Up! Anniversary Convention!

I was even one that received the Prize Patrol and got something special from our upcoming Holiday Catalog! I can't wait to make something with it and show you!

I love our General Sessions. We get to see so many great stamping presentations and listen to wonderful and funny speakers. The Stampin' Up! staff are all great speakers and have such a great sense of humor, that we are always entertained!!

We had 3 Make and Take Sessions and 6 classes to attend but I was able to squeeze in 7 classes. We even got a stamp set for attending classes!

I was inspired by:
# Convention 2012 I am doing Business My Way with the lovely Rhonda Wade and Tammy White and introduced by the funny, Bonnie Thurber
# Convention 2012  I am Open for Business with darling Carrie Cudney
# Convention 2012 I am having Fun with the hilarious and sweet, Shannon West
# Convention 2012 I am Savvy and saw some great projects from talented Donna Griffin, Dawn Griffith, Meg Wheeler and Laura Milligan
# Convention 2012 I am Making Money with fabulous, Pam Morgan
# Convention 2012 I am a Leader with Brian Pilling-such a comedian
and I fit in an extra class to see my friend Jill Hilliard in
# Convention 2012 I am earning an Incentive Trip with Jill and Karen Hauley, Meg Holland and Cynthia Millan

When not in classes or general sessions, I was taking photos of many cards and projects in our Gathering Place. Be sure to stop by this week so you can get some great ideas and get inspired!!!

Oh and I can't forget, Swapping was so much fun as well as meeting my great new friends and seeing great old ones!

Simply Sunday~ Skillet Gnocchi with Shrimp and Asparagus

HI friends,
I didn't have a post to share today until we just ate dinner. I tried a new recipe out of a magazine and it was really great so I am sharing it with you!

1 T plus 2 t Olive Oil , divided
1 16 ounce package shelf-stable Gnocchi
1/2 cup Shallots
1 bunch Asparagus cut into thirds
3/4 cup chicken broth
1 lb raw shrimp peeled and deveined
1/4 t ground pepper
pinch of salt
2 T Lemon Juice
1/3 cup grated Parmesan Cheese

1. Heat 1 T oil and add gnocchi. Cook 6-10 minutes, until golden brown and set aside in a bowl.
2. Add 2 t oil and shallots and cook over medium heat until browned. Stir in asparagus and broth and cook about 3-4 minutes until tender. Add shrimp and cook until pink about 3-4 minutes. Add salt and pepper.
4. Return Gnocchi to pan and add lemon juice for about 2 minutes. Sprinkle the cheese, cover and let stand until melted.
Enjoy!!
